COOKING UP A LITTLE IRISH!


Top of the morning to you!!!  If you want something yummy for dinner tonight, here is one of my favorite recipes.  Don’t forget to wear something green today and LOOK OUT for little men in green suits!

IRISH  STEW

3 pounds trimmed, lean, boneless beef top sirloin steak cut into 1” cubes
(or 4 pounds leg of lamb cut in 1” cubes)
1 TB. vegetable oil
1 pound onions, chopped
1 clove garlic, minced
¾ cup stout beer (Guinness)
4 bay leaves
1 can condensed beef broth
1 TB. salt
1 tsp. pepper
2 cups water
¾ pound carrots, cut into ¼” slices
1 pound new potatoes cut into ¾” cubes
2-3 tsp. dried tarragon

Brown beef or lamb cubes in vegetable oil in a Dutch oven over medium-high heat, stirring occasionally.  Add onion and next 7 ingredients; bring to a boil.  Cover, reduce heat, and simmer 30 minutes.  Add carrots, potatoes, and tarragon.  Cover and simmer 30 minutes more.  Remove and discard bay leaves. 

Serve over mashed potatoes, rice, noodles, or biscuits.
